Loaded Pulled Pork Potato Nachos

Loaded Pulled Pork Potato Nachos

Yield: 0

Ingredients

  • 3 large russet potatoes, sliced 1/4" thick
  • Olive oil
  • Garlic powder
  • onion powder
  • pepper
  • Salt
  • *Avocado sauce*
  • 1/2 cup greek yogurt
  • 1 ripe avocado
  • 1 teaspoon lime juice
  • salt
  • garlic powder
  • *other toppings*
  • Pulled Pork - we used Farm Rich smokehouse pulled pork
  • green onions
  • diced tomatoes
  • About 1 cup mozzarella cheese - shredded

Instructions

  1. Prepare pulled pork ahead of time. If you use the Farm Rich pulled pork, just throw it in the microwave while the potatoes cook.
  2. Preheat oven to 425.
  3. Toss potatoes generously with olive oil, garlic powder, onion powder, pepper and salt.
  4. Spread on a baking sheet that has been sprayed with cooking spray.
  5. Bake for about 20 minutes, or until the potatoes are tender.
  6. Put pulled pork on top of the potatoes, and then cover with cheese. Cook under broil until cheese is melted and bubbly.
  7. While the nachos are cooking, prepare the avocado sauce. Mash the avocado until smooth and combine with Greek yogurt, lime juice, as well as salt and garlic powder to taste.
  8. Top nachos with avocado sauce, green onions, and diced tomatoes.

I love simple recipes that have a lot of flavor.
