Love lasagna but don’t love the prep it takes? Then you’ll love this 30 minute skillet lasagna. It tastes just like it would if you made it in the oven, and is made on ONE dish!

Ever since I first saw some other bloggers making one dish or one skillet meals, I knew it was a trend I could jump on board with right away. You see…I don’t like doing dishes. And I don’t like having a messy kitchen. So it’s unfortunate that my favorite meals often require multiple dishes, posts, etc. Because then I end up with a messy kitchen, and a bunch of dishes I don’t want to clean (and we don’t have a fancy dishwasher, like the new GE Dishwasher with 102 jet wash system.)

After I transformed my favorite chicken enchilada recipe into skillet enchiladas, I was determined to make some of our other favorite dishes into one skillet meals as well, to make for easier weekday dinners. The next on my list was to make an even simpler version of my mom’s famous lasagna.

If you love lasagna, but really don’t like the prep work, this is the casserole for you. Even if you revel in the steps it takes to make a traditional lasagna, you probably still will like it. This honestly tasted just like a lasagna that has been baked in the oven, but takes so much less work. You only need ONE dish.

We never put cottage cheese or ricotta in our lasagnas (because I don’t like it) so this a pretty a simple recipe. The only cheese is mozzarella and parmesan. However, feel free to change it up however you want. We always like throwing in onions, but it would also be fabulous to add red and green peppers, mushrooms, etc.

You use a variety of different levels of heat while making this dish — from a simmer, to a light boil, to a broil (for the finishing touches.) While our oven did just fine with this, I’m just eyeing GE’s Double Oven Range with Tri Ring Burner…someday!
