Taco Bell Spicy Potato Soft Tacos are so delicious. They are a great vegetarian option and pack a lot of punch for just $1. Sadly, it’s being discontinued at Taco Bello, but now you can make it on your own with this easy-to-follow recipe!

Taco Bell is home of cheap and delicious food. While I certainly don’t mind stopping by every now and then and getting my fill, I like to make “healthier” versions at home.

One of my favorite menu items at Taco Bell is the spicy potato soft taco. Sadly, Taco Bell has decided to slash it from their menu, so thankfully, I can still make it at home!

What size taco shells should I use?

I usually buy soft taco sized flour tortillas, but I find them to be a bit big – definitely bigger than what you’ll get at Taco Bell. I also find that a lot of store-bought flour tortillas are thicker than Taco Bell’s.

I haven’t tried this yet, but street taco sized flour tortillas might be a good option for these!

Can I Make these Ahead of Time?

I wouldn’t recommend it. These are going to taste best if you prepare all the ingredients fresh and right before serving. You could assembled the tacos and keep them warm in the oven, though, if you need a little bit of extra time.

What is the sauce for Taco Bell’s potato soft tacos?

Taco Bell uses their spicy chipotle sauce for their potato soft tacos. You can purchase this at Walmart or you can try your hand at our Spicy Chipotle Sauce!

Is this recipe vegan?

This recipe is not vegan. The sauce has buttermilk in it, and there is cheese.

How to Make Potato Tacos

Ingredients

  • 2 large russet potato, cleaned and diced
  • 2 tablespoon olive oil
  • 2 heaping tablespoon white flour
  • 2 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (omit if you don’t like spiciness!)
  • Soft taco tortillas
  • lettuce, shredded
  • Tomatoes, diced
  • Colby Monterrey Jack shredded cheese
  • Spicy Chipotle Sauce

Instructions

  1. Preheat oven to 400 degrees.
  2. Place potatoes in a bowl and toss with olive oil.
  3. In another bowl, mix together the white flour, onion powder, garlic powder, paprika, and cayenne pepper.
  4. Toss with the potatoes until coated.
  5. Spread potatoes on a lightly oiled cooking sheet.
  6. Cook for 10 minutes, flip, and then cook for another 10 minutes.
  7. While the potatoes are cooking, heat a frying pan. Once fully heated, place tortillas on it and cook for about a minute on each side. No oil needed.
  8. Prepare the chipotle sauce.
  9. Once the potatoes are done, let cool a few minutes then assemble tacos – tortilla, a spoonful of chipotle sauce, potatoes, lettuce, tomatoes, and cheese.

Can I use a different kind of potato?

You could use red potatoes or yukon gold, but we have only tested this recipe with russet potatoes.

Is this recipe spicy?

It is a bit spicy – my young sons aren’t the biggest fans. You can make it less spicy by omitting the cayenne and the spicy chipotle sauce.

    Your time has truly come! I can’t thank you enough for creating this recipe! August 13, 2020 Taco Bell will no longer serve any potato products with the possible exception of nacho fries. 2020 sucks but your forethought is invaluable!

    Ok, so i love this recipe because it was so simple, but next time I make it I’m definitely going to add salt. The way I ate it I made 2 tacos using soft tortillas, avocado, lettuce, shredded Monterey Jack cheese, sour cream, and salsa, and it was soo delicious and filling.
    Will definitely make again. I’m glad i found this recipe. Thank you!!

    *If you make this recipe I highly recommend you add salt to it, because how the potatoes tasted without it wasn’t so good(bland) in my opinion(by themselves; delicious in a taco w/ other ingredients.)

    This recipe is fantastic! Taco Bell always makes me sick, even though it’s delicious, so I never go. But for some reason, I kept seeing posts on FB about their potato tacos and googled to find a recipe, yours is what I got.

    I made it exactly as stated, except I left out the lettuce, which I would like to put in next time. I also made several mistakes. I think I cut the potatoes too big and the tomatoes too big. The potatoes took longer to cook. I also didn’t read the recipe well and just poured everything into a bowl for the potatoes and mixed it up. It would have been better to do as the recipe says, and coat the potatoes and mix the dry ingredients separately.

    That being said, I think this is the best thing I have ever made. Maybe it was the sauce, it was just so delicious. I absolutely loved it and ended up having it for lunch and dinner. Thanks!

    A Tbsp or two of MSG helps a lot.
    Don’t be afraid of a naturally occurring substance that is high in Meat, Mushrooms, and Soy products. Trust me, the amount you’d need to make yourself sick would induce sodium poisoning first. Always keep msg on hand for these “big box” type recipes, because they always use them. Hence why their food is sooooo good.

    Hi! I just tried this recipe, and as a confirmed Taco Bell addict, I thought I would share what i did. I read all the previous comments as well. I doubled the spice mix so we could have more potatoes. I added 1 tsp cumin, 1 tsp chili powder, and 1 tsp salt. They are somewhat similar but I think frying the potatoes is the magic Taco Bell does to them. The sauce was great but I had to make some changes. Original was good but not the same to me. I used vegan plain yogurt(Silk Almond milk yogurt). I used the whole container and doubled the spices. I omitted the sugar and added 1 tsp cayenne, 3 tsps chipotle sauce(from canned peppers in adobo) and salt and pepper to taste. It’s a pretty close dupe with those modifications to me.

    In looking over your recipe, I noticed one thing that seems very odd. How can the Spicy Chipotle sauce even be called a chipotle sauce when it contains no chipotle peppers.

    Also the list of ingredients contains nothing that would make it spicy.

      That’s because I forgot to include a very important aspect of this recipe – I used adobe chile peppers in the sauce. It’s been so long since I made this, I will have to remake it to make sure I get the measurements correct. Thank you for pointing this out, Jackie!

    Nice try, but tastes nothing like the Taco Bell tacos unless I’m misreading an ingredient. The potatoes were way spicy. My kids couldn’t even eat them and they always eat the ones at Taco Bell. My daughter said the sauce tastes nothing like the sauce. Everybody has different taste buds though so worth a try for someone else. I tried researching to see if maybe I messed up with the cayenne pepper? I used the red cayenne pepper, but maybe there’s a whole other cayenne pepper that I’m missing. I would try to make the potatoes again if I messed that up. I will be trying some of your other recipes though. They look quite good. Thanks for sharing.

    OMG! I just made this recipe yesterday! I have to say, it tastes nearly identical to the Taco Bell version! It’s actually even better! I would buy the tacos nearly once a week but started feeling guilty bc of all of how unhealthy they are. Now I can make them at home! One thing I would like to ask is if you knew how many calories were in each taco? Thanks again! Can’t wait to try your other recipes out

    looks like a great recipe though i find it strange the “chipotle” sauce doesn’t actually contain chipotle! still probably great! i make a very similar vegan and oil free version of these often. and i use the chipotle JustMayo which is really yummy. ?

      The potatoes are wonderful! (I used 2 small russet potatoes)
      However, the sauce is ok. I’m not really a big sour cream fan though… if you are and you’re reading this, then you’ll love it!
      It’s not exactly like Taco Bell, but it’s way healthier and will kick that craving for ya!
      Definitely will be making again.
