A few days before I gave birth to Jack, I spent several hours making freezer meals with some ladies from church. One of the meals we made were freezer-ready homemade hot pockets. I thought they were rather yummy, and I think Forrest enjoyed eating them for lunch.
I haven’t made any since, but the other day, I thought it might be fun to make some homemade hot pockets! When I was in college, I would always buy these BBQ Beef Hot Pockets to have for lunch while I was at work. Now that I think back on it, those were probably super unhealthy…but, eh, the life of a college student, right?
Anyways! I took what I remember from when I made these a few years ago, and I came up with a super easy, much healthier alternative to hot pockets. These can be thrown together very quickly, and they can be customized to your family’s taste preferences. They can also easily be frozen!
I thought I’d share the basic “formula” for making homemade hot pockets, and then after that, I’ll share some delicious flavors that I came up with! They are pretty unique but absolutely delicious. My dad couldn’t stop raving about these. He told me he was definitely going to share this on his Facebook page!

First off, here’s what you’ll need:
- Rhodes Rolls
- Any ingredients you want! It’s good to have some kind of sauce, some cheese, and a couple of main ingredients. You can use deli meats cut up, sausage, pepperoni, chicken, spinach, veggies….the possibilities are endless!
And here’s how you make them!
Place as many Rhode’s Frozen Dinner Rolls onto a greased cookie sheet about six or seven hours before you want to make the pizza pockets.
After they have risen completely, flatten out into mini pizza shapes.
Put a layer of sauce on one side of the dough.
Then, put the toppings in. I put the cheese on last.
Fold the dough over and press the edges closed with a fork.
Brush with butter (or one of the sauces I mention below.) Sprinkling with freshly grated asiago or parmesan is a nice finishing touch!
Bake at 350 for about 20 minutes and enjoy!
There are a couple of ways to freeze these. First, you can wrap them in plastic, uncooked. You’ll just cook them at 350 for about 30-40 minutes. If you put them in the refrigerator the night before, you can cook them according to the regular instructions.
Alternatively, you can precook them and cook them in the microwave (frozen) for about 1 minute and 30 seconds.
HOT POCKET FLAVOR IDEAS
While I could have gone pretty traditional with the flavors, I wanted to try a few ideas out. Did you know that Pizza Hut has a whole new line of crusts, sauces, toppings, and drizzles? They are pretty fantastic. My brother turned 18 a few days ago, and my parents bought a bunch of pizzas from Pizza Hut to enjoy. I was very impressed with the selection and how delicious they were! My favorite, by far, was the pretzel crust with sausage, mushrooms, and a sriarcha honey flavor.
I thought it would be fun to make my homemade hot pocket flavors based off of the new Pizza hut line. They turned out SO good! Here are a few ideas. Just follow the instructions above and insert these ideas where necessary.
Asian Meatball with Sweet Chili Sauce and Honey Sriracha Glaze
This was both my dad’s and mine’s favorite. It is SO good. Can’t wait to make them again!
- Frozen meatballs
- Sweet chili sauce
- Honey roasted peanuts
- Mozzarella cheese
In a small bowl mix together about 1/2 cup Sriracha and 1 tablespoon honey. Mix together with cooked meatballs.
Put a layer of sweet chili sauce on the dough.
Cut meatballs in half and place a couple halves on each piece of dough. Then put some spinach, a couple of honey roasted peanuts, and finally, some mozzarella cheese.
Brush a mixture of more Sriracha and honey (about the same amount that you made for the meatballs.) Cook as directed above.
Garlic Chicken Hot Pocket
I really enjoyed these ones, too! They are based off of my recipe for garlic chicken pizza.
- Grilled chicken strips (cooked)
- Roma Tomato, diced
- Ranch Dressing
- Minced Garlic
- Mozzarella Cheese
- Garlic Powder
- Shredded Asiago Cheese
Chop up the grilled chicken strips and place in a bowl.
Mix together about 1/2 cup ranch dressing with 1 teaspoon of minced garlic.
Spread a layer of the ranch mixture onto each piece of dough.
Layer with chopped chicken strips, diced Roma tomato, and mozzarella cheese.
After closing the dough, brush with a mixture of melted butter and garlic powder. Top with shredded asiago cheese.
Sausage and Pepperoni Hot Pocket
- Cooked and crumbled sausage
- Mozzarella cheese
- Marinara sauce (we used a spicy kind)
- Garlic powder
Spread a layer of marinara sauce on each piece of dough.
Put pepperonis, sausage, and mozzarella cheese on top of sauce.
Brush the tops of the hot pockets with melted butter and garlic.
