This is one of the easiest dinners you’ll ever find – ham, potato and cheese roll-ups. Perfect for using up leftovers and for a 20-minute dinner idea!

Cheesy Potato Roll-Ups
When I was still pregnant, I texted my mom and complained about how I just didn’t want to make dinner anymore…and I had no ideas.
She responded back with a list of ideas of easy recipes that I could make, and one that stood out to me was ham and potato roll-ups.
I vaguely remembered her making these a time or two when I was growing up, and they sounded delicious.
After baby Andrew was born, I finally decided to make them. It’s such an easy dish that requires very little time or preparation – which is perfect for a mom with a newborn and two other kids.
I actually feel a little silly calling this recipe…just because they are SO easy. It’s more like the preparation of common household ingredients.
But they are really tasty. My big boys both loved them – Jack even took two in his lunch the next day.
With some Ham-centric holidays coming up, this is a great way to use up some leftover ham and potatoes…but it’s honestly an awesome fast and easy meal any time of year!

Potato and Ham Roll-Ups
Ingredients

- 16 pieces Black Forest Ham (or any variety – I like the Kirkland brand)
- 3-4 cups prepared Mashed Potatoes (I just bought some Bob Evan’s Mashed Potatoes to make things even easier, but you can definitely use homemade!)
- 1 cup Colby Jack Shredded Cheese
Instructions
Preheat oven to 350 degrees.

Place pieces of ham on a baking sheet.

Put a couple of tablespoons of mashed potatoes on one side of the ham.

Sprinkle with cheese

Fold over the ham, securing the mashed potatoes inside.

Bake for 15 minutes, and then broil for 1-2 minutes.

Have you tried adding eggs? These would make perfect little freezable breakfast dealies! Have you ever frozen them?

That’s a great idea – I’m going to try that. I have not frozen them, but I think they’d freeze well!
