Clarks Condensed isn’t the first blog I’ve written. Right before I graduated from high school, I started “Cooking with Katie”. While looking at the blog design makes me laugh, and the quality of the pictures is quite horrible, I had quite a few yummy recipes on there. One of those was apricot chicken.

During my senior year, I pretty much made dinner every night for my family, and apricot chicken is the first meal I remember making. After that, it was probably my favorite meal, and when I left for college, I made it quite often. In fact, it was the first meal I made for Forrest. For some reason, for awhile, he thought it was the only meal I knew how to make. Such a funny boy.

I feel like it’s such a homey, delicious, and easy meal, and it’s perfect for anyone who’s busy, but still want a delicious meal. It remains one of my favorite meals.

While I usually make apricot chicken in the oven, I thought it could be easily made in the crock pot — and I was right! It’s just four ingredients, a couple of hours, and viola — perfectly cooked, apricot chicken.

I don’t usually shred my apricot chicken from the oven, but I feel like cooking it in the crock pot made it so easily shreddable, and it would be perfect over rice or as a wrap filling!

 

Slow Cooker Apricot Chicken - sweet and tangy, and super easy!

I’ve included the instructions below for both the stove version and the crock pot version. I hope that you’ll all enjoy it, too.

Apricot Chicken

Ingredients

  • 6 chicken breasts
  • 3/4 cup Apricot Jam
  • 1 pkg. French Onion Soup Mix
  • 1/2 bottle French or Catalina Dressing

Instructions

  1. Oven Instructions
  2. Preheat oven to 325 degrees.
  3. Mix together jam, french onion soup mix, and dressing in a medium size bowl until well combined.
  4. Place chicken breasts in an oven safe container.
  5. Pour jam mixture over the chicken.
  6. Cook in oven for about 45 minutes to an hour.
  7. Slow Cooker Instructions
  8. Mix together jam, french onion soup mix, and dressing in a medium size bowl until well combined.
  9. Place thawed chicken breast in the crock pot and cover with mixture.
  10. Cook for about 2 hours on high, or 4 hours on low. Shred if desired.
