When it comes to avocados people either love them or they don’t.
I happen to love them and would eat them every day if I could.

My two young daughters also love them which makes it so easy to incorporate them into our meals during the week.
They are so versatile, fresh avocados can be used in any meal or dish. They can be used as a recipe substitute for bad fats, a way to add naturally good fats, a nutrient-dense fruit to add nutrient value, and as a vegan or vegetarian possible alternative to dairy products.
Avocados contain naturally good monounsaturated fat and are cholesterol free. Naturally good fats are an important part of a healthy diet. For those reasons I feel so good about serving them to my family. It’s a great way to get in those good fats and not feel bad about it.
Avocados, which are a fruit although most people think of them as a vegetable, contain less than one gram of sugar per 1-ounce, the least amount of sugar per serving of any other fresh fruit. I can’t believe I’ve considered them a vegetable all these years!
Now that you know how important they are for your diet- I have to share with you five fabulous ways to eat and enjoy them! Starting with my personal favorite:
When you think avocados you probably also think guacamole! Homemade guacamole is so easy to make!
Simply mash up 2-3 avocados, 2-3 diced tomatoes, garlic to taste, a few drops of fresh lime and cilantro and you have a fresh, tasty dish.
Avocado toast is quick, easy and delicious. My kids beg to have this for lunch!
After toasting bread of your choice, spread mashed up avocado on top. I like to add salt and pepper and a dash of hot sauce but you can top it however you’d like.
Avocado Egg Salad
I love substituting avocado for mayonnaise! Because it’s rich and creamy I don’t feel like I’m missing out on anything. You would make your egg salad like you normally would- hard boiled eggs, salt and pepper, a little mustard and then just add 1 avocado in place of mayo. You might even like it better this way!
Avocado and Cottage Cheese
I discovered this delicious mixture several years ago and still enjoy it regularly.
Put 12 cup of cottage cheese, 1 diced avocado and a couple diced roma tomatoes into a bowl and mix together. Add salt and pepper (and hot sauce) to taste and enjoy! I also like to scoop the mixture onto a warmed flatbread when I have it.
Avocado & breafast
I love that you can add avocado to just about anything! I add avocado to my eggs whenever possible.
If I am scrambling eggs I just add them into the pan, if I am have a fried egg, I layer the egg on top of avocado on my toast.
You can add it to an omelette, on top of a breakfast casserole or even in a breakfast smoothie!
