These are the BEST easy thumbprint cookies – maybe even the best cookies! They are super simple to make, and they are always a big hit – the jelly center is the best part.

Thumbprint cookies are definitely my favorite cookie. My mom has been making them for a few years now, and I’m always so excited when I see them sitting on the counter at her house. Thumbprint Cookies One day during Christmas week, I decided to make up a batch. I needed to feel a little more cheery, and that’s something baking can almost always help with.

Gluten Free Desserts

Because one of my brother-in-laws can’t eat gluten, I decided to make one batch gluten free as well. I had never done this before, so I wasn’t sure how they would turn out. Well, they were a success! My brother-in-law raved about them, and others said they were quite delicious as well. And of course, we all enjoyed the regular ones as well. I also took these to a church activity recently, and everyone who tried them asked for the recipe! Thumbprint Cookies

So if you are looking for an amazing (and most importantly, easy) cookie recipe that can be made with regular flour and made to be gluten free, don’t look any further. Be warned though – they are SUPER addicting. Oh, and Jack LOVED helping with these cookies. He did a whole batch by himself. Thumbprint Cookies

Raspberry Thumbprint Cookies

Raspberry Thumbprint Cookies

Yield: 30
Cook Time: 15 minutes
Total Time: 15 minutes

Ingredients

  • 1 cup softened butter
  • 2/3 cup sugar
  • 1 teaspoon almond extract
  • 2 cups white flour, for gluten free, I used King Arthur's and only used 1 3/4 cup
  • Raspberry Jam
  • Glaze:
  • 1 1/2 cup powdered sugar
  • 3 tablespoons water
  • 1 teaspoon almond extract

Instructions

  1. Using a mixer (hand or stand), combine butter, sugar, and almond extract until smooth and cream.
  2. Slowly add in flour, 1/2 cup at a time, until the dough is formed.
  3. Once dough is made, roll into small, 1-inch balls and place on a cookie sheet covered with parchment paper or a silicone baking mat.
  4. Gently press your thumb into the center of each cookie.
  5. Put a dollop of jam into each imprint.
  6. Bake at 350 for 14-16 minutes.
  7. While baking, mix together powdered sugar, water, and almond extract.
  8. Remove from oven, let cool about five minutes.
  9. Drizzle with glaze.
  10. Enjoy!

    If you dont have almond extract can you use vanilla extract
