Black Bean Tacos and Apple Sauce Cookies

Six Sisters' Stuff Cookbook Review: A great cookbook for anyone looking for new ideas!

Black Bean Tacos

Black Bean Tacos

Yield: 0

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon cilantro
  • ΒΌ cup salsa
  • About 1/2 cup red pepper and onion, sauteed
  • Romaine Lettuce
  • Mozzarella Cheese
  • 8 corn tortillas
  • About ΒΌ cup oil, I used coconut oil

Instructions

  1. Instructions
  2. Combine all ingredients except for cheese and tortillas in a bowl. Coarsely mash mixture until everything is combined.
  3. Heat a skillet with about 1/4 cup to medium high heat.
  4. Place tortilla in the oil and lightly fry. Remove and place on a tortilla to get rid of excess oil.
  5. Place tortilla on a baking sheet and spread about 2 tablespoons of the black bean mixture on half of the corn tortilla.
  6. Add about 1 tablespoon of the red pepper and onion.
  7. Sprinkle mozzarella cheese on top.
  8. Fold the other half of the tortilla over the mixture. Flip over if you need the beans to weight down the tortilla to keep it closed.
  9. Bake for 10 minutes at 400 degrees.
  10. Serve with extra salsa and romaine lettuce.

    What happened to the original recipe? I remember a version of the black bean tacos that was not baked in the oven, and I’d like to make it again.

      I changed it awhile ago after I made them the original way and felt they were too difficult to fry without everything falling out of the tortilla shell. However, you can definitely still try them that way! You just assemble them as I describe, and then just fry them in oil on the stove top πŸ™‚

      Sorry, I updated the original recipe and for some reason the old one didn’t get deleted. The oil is just to fry the tortilla in. The new recipe should have all the information you need. Thanks!!

    Did your salsa have big red onion chucks in it? I see purple pieces in the pic-I was just curious..
    I used hard shell tacos I had and tomatillo salsa-these web fab!

      That’s a great idea to use the hard shell tacos — it makes this meal even easier. I love tomatillo salsa! I’m not seeing the same purple pieces though you are haha. Our screens must have a different color setting πŸ™‚ I just used Pace Picante Salsa (not my favorite, but it worked!)

      I believe so! I did a similar recipe (mini chicken tacos), and we did them in the oven. They still turned out crispy. Sorry I’m just now responding!

    Hello! I stumbled upon this website through Pinterest. These cookies look amazing! But where is the peanut butter in the recipe? I see butter, but neither peanuts nor peanut butter. Help! I have all the ingredients EXCEPT for butter and was hoping to make cookies tonight with almond butter instead…? I’m a cookie monster with a wicked cookie craving right about now….
