These BBQ Chicken Enchiladas are adult and kid friendly and only require a few simple ingredients!

Whether it’s a meal for a new mom, for someone who is sick, or just because, I love being able to create a yummy meal or simple recipe for them. Whenever I’m making food, whether it’s for us, or someone else, I always try to involve Jack. It’s my hope that he’ll not only learn to love to cook but to have a desire to cook for others as well!
BBQ Chicken Enchiladas
Ingredients
- 8 to rtillas, I used Artisan tortillas, which are a combination between flour and corn
- 1 small can red enchilada sauce
- 1/4 cup sweet BBQ sauce
- 10 Tyson Any'Tizers, Honey BBQ Flavored
- 1/4 diced red onion
- 2 tablespoons olive oil
- 1 1/2 cups cooked rice
- 1 - 2 cups Kraft Mexican Blend Cheese
Instructions
- Preheat oven to 350
- Cook anytizers in the microwave until cooked. Cut into small pieces.
- Heat olive oil in a pan and saute onions. Add in chicken and rice and cook another minute or two.
- Place one tortilla in the cooking dish you will be baking the enchiladas in, and place a scoop of the chicken and rice mixture.
- Roll tortilla, and place snuggly in the pan.
- Repeat until all tortillas are used.
- Mix together the BBQ sauce and enchilada sauce. Pour evenly over the enchiladas.
- Sprinkle desired amount of cheese over the top of the enchiladas.
- Bake with tin foil on top for 20 minutes. After 20 minutes, remove and cook for another 10 or so, or until cheese is melted.

Those look and sound delicious! The tags are such a great thought, it makes it so personal, and with so many food allergies, it’s always nice for folks to know the ingredients! I love the partnership between Tyson, Walmart and Champions for Kids, it is such an important cause, and I think it’s wonderful what these companies are doing, AND that you are sharing these values with your son!! #client

I think the tags are such a great idea! I’ve usually just told recipients the instructions, or written it right on the foil. Haha! I might have to give this recipe a try. Thanks for sharing!

Thanks for commenting! I always tell people the instructions or ingredients when I see them, but sometimes you just don’t have a lot of time (depending on why you are bringing the meal!) I definitely do the writing on the tin foil thing myself :)Be sure to let me know if you try the recipe!
