Hi Juli! I just asked Jamie (the creator of this recipe) and she said this:

I have never tried freezing them to be honest – so I’m really not sure how it would affect them. I would suggest making them into balls – but not rolling them in the 2nd box of Jello until you’re ready to use them. If someone tries freezing them, I would love to hear how it affected them!
