Pot-of-Gold Pistachio Pudding Cookies

Servings 30 cookies


  • 1/2 cup softened butter
  • 1/2 cup sugar
  • 1 tbsp strawberry jello mix
  • 1 package pistachio pudding mix
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 bag coconut M&Ms
  • 30 rolos
  • Wilton's green food color gel


  • Preheat oven to 350 degrees. Cream btuter, sugar, jello mix, and pudding mix. After the mixture is smooth, add egg and vanilla, and mix until well-incorporated. Add in remaining ingredients and mix until everything is combined. Add in a very small amount of food color gel until desired color is reached.
  • On a greased cookie shot, drop spoonfuls of cookie mixture, leaving about about 2 inches between each cookie. Bake 8-10 minutes. Let cool on cookie sheet for about five minutes, and place rolos in center of each cookie while still warm. Transfer to cooling racks until completely cooled.
