Fine for quick consumption, but not if you buy bulk and plan to store/freeze some or all of it. It&#039;s so much better if the producer flash freezes instead of the consumer freezes it for so many reasons. The flash freeze process keeps ice crystals tiny which helps the meat to not get &quot;cut up&quot; by the formation of crystals in the freezing process (thats why some poorly frozen meat is soft or mushy). This is especially important in softer meats things like fish. And it&#039;s better to freeze same day the meat is cut than a week later when you get it. Flash frozen is really the only way to go for any bulk buying of quality meats IMHO.]]></description>
