You can buy a food grade mineral oil. Combine it with a food grade bees wax and it makes a great paste. There are bunch of Yuotube videos on how to make the paste. Walnut oil is also a good choice. Be careful with olive oil as it can become rancid.

The fractionated coconut oil was a fail. It soaked into the board easily enough but didn’t do much to protect it.
