- 1 package Hillshire Grilled Chicken Bites with Spicy Chipotle BBQ Dipping Sauce
- 1 Tablespoon ranch dressing
- Tortilla strips
- Sandwich roll
- Remove the BBQ sauce package from the chicken bites package. Combine with ranch dressing.
- Place chicken from the package in a small bowl and crush up somewhat with a fork.
- Mix in BBQ and ranch mixture.
- Mix in tortilla strips.
- Place on a roll with romaine.
If you follow what health professionals say is best, you should be eating six small meals a day, rather than three large ones (so, breakfast, lunch, and dinner.) While I certainly try to do this, more often than not, I mess up and have a large meal at the end of the day, with random snacking throughout the rest of the day. I’ve been trying to find a way lately to eat more substantial snacks throughout the day that will make it easier to not feel famished by dinner, thus causing me to overeat. I want to eat something that’s filling, but that doesn’t take too much prep, either! With a new baby coming very soon, and a busy three-year-old, quick and easy is my philosophy with everything!
I recently heard about the Hillshire Snacking line – specifically their grilled chicken bites! These little packages come with chicken and a tasty dipping sauce, which makes it great for a snack that is substantial and not just empty calories. You get plenty of protein from the chicken – which is great for powering through a busy day – and the sauces are really delicious.
When I saw the Grilled Chicken and Chipotle BBQ package at the store (it was even on sale), I thought it would be fun to make into a BBQ chicken salad sandwich – it doesn’t have a lot to it, and you can easily just throw it together on the go. Even if I just wanted to have the chicken and BBQ sauce together, it would be filling, and putting it with a few other ingredients makes it delicious as well.
This is a great snack to make when you are on the go – you can just throw the sealed package into a lunch box that has an ice pack, a little package of ranch dressing, along with the other ingredients, and you could make it quickly on the go. I would have loved to have something as convenient as this when I was in college – I always got hungry on campus and ended up buying snacks from the vending machine that were just empty calories. These Grilled Chicken bites would have been a much better option than a Grandma’s Double Chocolate Cookie (despite how delicious those were!)
I LOVED this quick sandwich. I was trying to eat it without Jack seeing it, because I wanted to eat it all myself – selfish, I know. Unfortunately, he saw me, and since I can’t hardly so no to him, we both enjoyed it together. It had some great flavor, and I loved that the chicken was already pre-diced and the BBQ sauce was portioned perfectly for one person.

I can’t wait to try a few of the other grilled chicken bites from this line – they have teriyaki, honey mustard, and mango habanero. Great for busy people on the go – whether you are in college, a mom trying to eat better, or just someone with a busy lifestyle…these are really delicious! Hillshire Snacking also has yummy snack plates, which have gourmet cheese, deli meats, and crackers, which I’ve really enjoyed for a snack to keep me feeling powered during the day.
